Zucchini Fritters

Zucchini or Courgette is a summer squash, and belongs to the same family as cucumbers, melons, squashes, pumpkin. It can be light to dark green, or yellow in color. For culinary purposes, it is treated as a vegetable but botanically is a fruit.
Zucchini is low in calories and carbohydrates, has high water content and contains decent amount of Vitamin C. It also contains Folate, Potassium and Vitamin A in useful amounts.
Gram/Chickpea Flour or Besan is a pulse flour made by grinding raw or roasted Bengal Gram.
Chickpea/gram flour is nutritionally dense, gluten-free and adds high protein, iron and fiber content to this recipe along with many other vitamins and minerals.
Using Zucchini and Gram Flour makes it a healthy appetizer or snack which is gluten-free and packed with nutrients.
Zucchini Fritters

Grated Zucchini/Courgette – 2 cups
Bengal Gram/Chickpea Flour/Besan – 3/4 cup (see notes for alternatives)
Rice Flour (optional) – 1 tbsp
Sesame seeds (optional) – 2 tsp
Turmeric (optional) – 1/4 tsp
Salt – to taste
Powdered/Crushed Black Pepper (optional) – to taste
Lemon juice (optional) – 1 tsp
Directions
- In a bowl, grate a medium zucchini. It should yield about 2 cups of grated zucchini
- Add salt to grated zucchini. Note: zucchini will release water once salt is added as it is high in water content.
- Add gram flour, mix well.
- Add rice flour, black pepper powder, and lemon juice. Mix well. This step is optional.
- Leave aside for 5 mins.
- Meanwhile, heat oil in a non-stick pan on low flame.
- Mix the batter well. It should be of medium flowy consistency – not too thick not too thin.
- Spread zucchini batter in small circles on the heated pan using a round spatula/spoon.
- Sprinkle some sesame seeds on top (optional) and gently press with a flat spatula/slotted flipper.
- Cook on low flame for 7-10 mins or until golden brown, flip to other side and cook for additional 3-5 mins. Complete this process for the entire batter.
- Serve hot with mint sauce.
Notes
- Both gram and rice flour are naturally gluten-free.
- You may choose to use or whole wheat flour instead of gram flour. Or mix oatmeal flour and chickpea flour in equal quantities.
- Rice flour makes fritters crispier and also easier to flip.
