Smashed Avocado on Toast (with Egg)

Here is a simple and quick breakfast – avocado smash toast with egg. It is not just super fast to make but very healthy and delicious.

This toast can be enjoyed without egg as well, just omit egg in the recipe.

Avocados are nutritionally dense food. They are rich in Vitamin K, C and Folate and contain many other vitamins and minerals including decent amounts of Vitamin B5, B6 and E. They are loaded with fiber and heart healthy fats.

Eggs are an excellent source of protein. They also contain good amounts of Vitamin D. Although high in sodium and cholesterol.

Multigrain bread, avocado and egg provide a great combination of carbohydrates, protein and healthy fats and are a perfect breakfast to kick start a busy day.

Avocado Smash on Toast

Ingredients

  • Multigrain Bread Slices – 2

  • Avocado – 1

  • Boiled Egg – 1

  • Salt – ¼ tsp. or to taste

  • Crushed Black Pepper – ¼ tsp. or to taste

  • Lemon Juice – 1 tsp.

Directions

  • Toast bread slices – in a toaster or on a pan
  • Cut avocado into half, remove flesh using a spoon.
  • In a bowl, smash avocado using a fork.
  • Squeeze ¼ of a lemon on it, about 1 tsp juice. Mix well.
  • Sprinkle salt, and freshly crushed black pepper; mix well.
  • Cut boiled egg into pieces.
  • On a toast, spread avo. smash, place sliced egg on top
  • This toast can be enjoyed without egg as well. Simply omit egg and serve with avo smash on toast.
  • Enjoy with fruit juice of your choice

Notes

  • If using a medium/large avocado, use only half of it.
  • Any type of bread can be used with it.
  • Don’t want to smash avo, just cut it into slices and add lemon juice, salt and pepper.
