Peach Dessert Pizza

I try to use fresh seasonal fruits as much as I can in my desserts. Stone fruits are easy to incorporate into various baked and non-baked desserts. One such dessert is peach tart.

This pizza is not overly sweet and works well even with tart peaches.

Ingredients

  • Thin crust pizza bases – 2

  • Peaches – 2

  • Mascarpone cheese – 4 TBS

  • Chopped Almonds – 1 tsp

  • Pomegranate – 1 tsp (optional)

  • Peach Jam – 2 tsp (recommended if using tart peaches)

  • Graham crackers – 2 or 3

Directions

  • Pre-heat oven to 220°C or 440°F
  • Light butter the pizza crust, and cook for 8-10 min until crispy. Or grill for 2-3 mins until golden brown and crispy.
  • While the base is in oven, cut peach lengthwise into wedges.
  • Gill them or sauté them in a pan with little butter
  • Sprinkle 1 tsp sugar if peaches are too tart
  • Set aside to cool until lukewarm
  • Prepare crumb – Use leftover crump or crush graham cracker (or any buttery cookie or biscuit); keep aside
  • Layer mascarpone cheese on the base
  • Then apply a layer of peach jam. You can sue apricot jam if you don’t have peach jam on hand.
  • Place grilled peach slices on top
  • Sprinkle crumb
