Peach Dessert Pizza

I try to use fresh seasonal fruits as much as I can in my desserts. Stone fruits are easy to incorporate into various baked and non-baked desserts. One such dessert is peach tart.
This pizza is not overly sweet and works well even with tart peaches.

Thin crust pizza bases – 2
Peaches – 2
Mascarpone cheese – 4 TBS
Chopped Almonds – 1 tsp
Pomegranate – 1 tsp (optional)
Peach Jam – 2 tsp (recommended if using tart peaches)
Graham crackers – 2 or 3
Directions
- Pre-heat oven to 220°C or 440°F
- Light butter the pizza crust, and cook for 8-10 min until crispy. Or grill for 2-3 mins until golden brown and crispy.
- While the base is in oven, cut peach lengthwise into wedges.
- Gill them or sauté them in a pan with little butter
- Sprinkle 1 tsp sugar if peaches are too tart
- Set aside to cool until lukewarm
- Prepare crumb – Use leftover crump or crush graham cracker (or any buttery cookie or biscuit); keep aside
- Layer mascarpone cheese on the base
- Then apply a layer of peach jam. You can sue apricot jam if you don’t have peach jam on hand.
- Place grilled peach slices on top
- Sprinkle crumb
- Garnish with mint leaves
