Potatoes get a bad reputation when it comes to healthy eating. On contrary to prevalent belief, potatoes contain very less fat and are not high in calories. They are high on carbohydrates and fiber. While consuming high amounts of fried potatoes might not be good for heath, a medium baked potato has only 110 calories and due to its water and fiber content can keep you full for longer.

Potatoes are a rich source of Vitamin B6 and Vitamin C. And are stuffed with phytonutrients.
Purple potatoes are especially rich in phytonutrients and anti- oxidants.

Bell Peppers or capsicum come in green, yellow, orange, and red colors. They are low in calories and have very high amounts of Vitamin C and anti-oxidants. They also good source of and Pro-vitamin A and a decent source of Vitamin B6, Folate, Potassium, Manganese, and Copper.

Almonds add extra crunch and Vitamin E.

Ingredients

  • Small (Yellow) Potatoes – 10

  • Chopped Green, Red, Yellow Bell Peppers – 1 cup

  • Chopped Almonds – 1 tsp.

  • Garlic Powder (optional) – ½ tsp.

  • Salt – 1 tbsp. or to taste

  • Powdered/Crushed Black Pepper (optional) – 1 tsp. or to taste

  • Lemon juice (optional) – 1 tsp.

Directions

  • Cook potatoes in a large pot for boiling water, for about 10 mins or until tender
    Chop bell peppers
  • Pre-heat oven to 180°C
  • Line a baking tray with parchment paper
  • Place cooked potatoes on the tray and gently crush/smash them using a potato masher. (do not mash, just gently press so that it flattens)
  • Coat lightly with oil. Add salt, pepper and garlic powder. Flip to the other side and repeat.
  • Bake for 10-12 mins or until golden brown
  • Add chopped bell peppers, and chopped almonds. You may choose to grate some cheese on top.Golden Smashed Potato
  • Put back in the oven for additional 5 mins. If using OTG, use grill mode.
  • Garnish with chopped mint or cilantro
  • Serve with mint sauce or mint mayo

Notes

  • Red or purple potatoes can be used instead of yellow/white ones.
