Banana Blueberry Cake

Who doesn’t love cakes? The good thing is, there are so many different types of cake that can be baked. You can add most fresh fruits, dried fruits, nuts and let’s not forget, chocolate, to a cake and it ill turn out Yum!! Here is a recipe for Banana Blueberry cake. this is by far one of my favorite cakes. I love banana in desserts especially in cakes and pancakes. This version is egg-free, soy-free, and vegan & gluten-free adaptable.

Medium Ripe Banana Potatoes – 3
All Purpose Flour – ½ cup
Whole Wheat flour – ½ cup
Oats Flour – ½ cup
Baking Powder – 1 tbsp.
Baking Soda – 1/2 tsp.
Powdered Sugar (optional) – ¼ cup
Unsalted Butter (melted) or vegetable oil– ¼ cup
Water – ¼ cup
Blueberries – 15-20
Vanilla extract – 1 tsp.
Directions
- Pre-heat oven to 180°C
- Grease inside of a baking pan. Sprinkle some flour on the greased pan and tap the pan gently to remove access flour. Keep aside.
- Mix flours, baking powder, baking soda and sugar. Note: I did not add any sugar as bananas are already sweet.
• Sieve this mix using a fine sieve. - Melt butter (Microwave for 30 secs and stir with a spoon).
- Mash bananas with a fork. Add vanilla extract to this mash.
- In a bowl, mix together melted butter, water and mashed bananas.
- Add in dry ingredients mix (from step 4). Mix well until the batter is smooth with no lumps. It should be of medium consistency and not too runny. Add 4 tbsp of additional water if the batter is too thick.
- Fold in the blueberries.
- Pour this batter in the baking pan.
- Bake for 40-45 mins or until golden on top and a toothpick/knife inserted in the middle of the cake comes out clean.
Notes
- Replace all purpose and wheat flour with almond flour for gluten-free cake. Add 2 bananas and additional ¼ cup water if using almond flour. Oats are naturally gluten-free but harvesting, storage and processing might introduce gluten in oats and hence in oats flour. Look for ‘Gluten-Free’ label on flour packaging to ensure it is gluten-free.
- Use vegan butter or vegetable oil for a vegan version.
- I did not add any sugar as bananas are already sweet and I like mildly sweet cakes. If blueberries used are sweet, I suggest not using any sugar. Add sugar, if blueberries are tart.
