Almond Butter Toast, Egg and Carrots

Almond butter is an excellent source of Vitamin E and healthy fats.

Eggs are an excellent source of protein. They also contain good amounts of Vitamin D. It is known that eggs protein is not destroyed upon heating. Egg can be cooked in any form for this recipe; I personally like boiled egg with it.

Carrots are rich in vitamin A and fiber.

Ingredients

  • Multigrain Bread Slices – 1

  • Almond Butter – 1 tbsp

  • Banana Slices or any fruit of choice– 5/6

  • Boiled Egg – 1

  • Baby Carrots – 4

  • Vegetable Oil – 1 tsp

  • Salt – ¼ tsp. or to taste

  • Crushed Black Pepper – ¼ tsp. or to taste

Directions

  • Saute/Grill Carrots
  • Heat oil in a pan, add baby carrots.
  • Sprinkle salt, and freshly crushed black pepper.
  • Cook for 5 on one side, turn and cook on the other side until tender.
  • Cut boiled egg into pieces.
  • Toast bread slices – in a toaster or on a pan.
  • Cut banana into slices. Note: save rest of the banana for a banana smoothie 😊
  • On a toast, spread almond butter, place sliced banana on top (or any fruit of choice). Note: This recipe uses crunchy lightly salted almond butter.
  • Serve with grilled carrots and egg.
